CRED.IT (acronym of Regional and Dietetic Italian Cuisine) is a project which concerns the research, cataloguing and revision of Regional Italian Cuisine dishes, focusing the attention on their Dietetic profile.
CRED.IT’s mission is to spread and defend Italian regional cuisine, updating the recipes according to the ingredients present in our territory today, to the new technologies, and the nutritional facts we have nowadays.
The staff of experts in cooking and gastronomic culture, who are part of the CRED.IT project, started out from the idea that most of the traditional recipes are no longer carried out: these dishes are no longer prepared at home and in restaurants because of the high calories of the ingredients, the difficulties of the recipes and in finding the ingredients and the time required to carry out the recipes.
CRED.IT allows its associates to reinvent the dishes using their creativity, without altering the original recipe: they maintain their original taste and lose those negative characteristics which almost brought them to extinction.
Dot IT indicates that this all happens on the web, meeting point between local and global. The “E” stands for the Italian conjunction and, but its function isn’t only being a conjunction:the reinvented dishes from the Regional and Dietetic ITalian Cuisine, are the perfect combination between Taste (old) and Knowledge (modern). They are old, traditional, but at the same time new and modern dishes. Creatively reinvented focusing on the amount of calories.
CRED.IT has prepared a specific website for each recipe, where the information on the origin and the historical background may be found – its collocation in the food culture of the time – and its variation and evolution I time. CRED.IT started out this operation from some of the most important Neapolitan recipes, such as the pastiera.it, sfogliatella.it, sartu.it, pizzanapulitana.it, casatiello.it, maccheroni.it and many.
Other websites have been prepared which deepen the historical and geographical dynamics of worldwide famous dishes with Italian origins
(risotto.it,tortellini.it,ravioli.it,cotechino.it, etc).
The presence of these websites allow visitors to integrate CRED.IT work, giving new suggestions to these recipes, respecting the tradition. CRED.IT carried out a precious device at the end of the 90s, which makes it possible for people to find out the calories of food or other nutrients on the website www.calorie.it.
With www.calorie.it
users may easily calculate the amount of calories contained in every dish, and changes the amount of calories as you change the single ingredients in each recipe. It’s the biggest database in the world.
CRED:IT is a projects which was born in the 90s Claudio Ciaravolo's idea, in the order, psychiatrist, gourmet, but above all gastronomic lover like all those who have contributed to CRED.IT’s success throughout the years.
CRED.IT’s belief is that it’s possible to combine good food with good eating: it’s possible to prepare the most delicious traditional dishes without living up the taste and assuming a limited quantity of calories.
The aim of CRED.IT’s research is to show that “regional dietetic cuisine” is not oxymoron, that we can associate good taste to low calories, and that we may innovate recipes without breaking the connection with the tradition.
The traditional Italian cuisine paid attention to the cost of the ingredients: meals had to be tasty and cheap. To combine these two ideas, taste and pocket, the cook had to blessed with creativity.
CRED.IT looks up to this creativity, which made Italian cuisine famous all over the world.
Many things have changed in the years: some ingredients which were cheaper before, such as fruit and vegetables, are expensive today, on the other hand ingredients expensive at the time, such as meat, are not.
Some ingredients used in the past to provide more energies, such as butter or lard, have been substituted by olive oil, which provide less energies, today less necessary and is healthier.
The creativity which was a necessity in all the traditional Italian cuisine, is also CRED.IT’s password. Creativity is the ability of organizing things with what you’ve got, and CRED is studying the possibility of introducing new technologies to be implied in old traditional dishes. Microwave ovens, if used properly, exalts and doesn’t modify the old tastes, and it requires less time to cook and less dressing. The new crisp technique allows to give up frying, but not the crispy and tasty effect.
Also famous people from the world of culture, showbiz and politician contribute to the spread of this new and traditional made in Italy. To celebrate its tenth birthday, CRED.IT offers his supporters and members, a newly updated database, to give them the possibility to follow the progress of research and to contribute with their own suggestions.
